Frittata. Frittatas are the ultimate clean-out-the-fridge weeknight dinner or weekend brunch recipe. Frittatas also transport well, so you can bring slices to picnics or pack them up for work lunches. Frittatas have saved me on more hungry weeknights than I care to count.

Ingredients of Frittata
- You need of Frittata.
- Prepare 1 of 9.6 oz package Jimmy Dean sausage crumble.
- It's 1/2 of onion chopped.
- It's 2 cup of cubed red potatoes.
- You need 8 of Eggs beatend.
- Prepare 1/4 cup of Parmesan cheese.
- Prepare 1/4 tsp of Salt.
- It's 1/4 tsp of Pepper.
- It's 1/2 cup of Chopped tomatoes.
- It's 2 of Green onions thinly sliced.
Italian-style omelets for stove top or oven. Great for breakfast, lunch, or dinner. Make this frittata even easier by using cooked bacon from the freezer. It's a wonderful dish to serve.
Frittata instructions
- Heat oven to 350°F.
- Add eggs salt pepper and cheese to a large mixing bowl and mix well set aside.
- In a large pot cook the potatoes in salted water. Add potatoes to boiling water cooking 5 to 7 minutes.
- While potatoes are cooking, in a skillet over medium heat cook the onions with 1 tablespoon of vegetable oil until brown and tender about 2 minutes stirring often.
- Add sausage to the onions, cooking 5 minutes stirring often.
- Drain potatoes and add to the skillet.
- Add the egg mixture to the skillet, mixing well with other ingredients.
- Cook over medium heat 2 minutes, occasionally lifting edge with a spatula and tilting skillet to allow uncooked egg to flow underneath. Do not stir.
- Reduce heat to medium low and cook another 3 minutes until eggs are firm on the bottom.
- Remove skillet from stove top and place in from the oven until eggs are firm about 10 minutes.
- Remove from oven and cut into wedges. Top with tomatoes and green onions and serve. Also top with crumbled cooked bacon.
- May also top with 3/4 cup shredded cheese immediately prior to placing into oven.

Great way to make breakfast for a crowd and a make ahead, protein rich meal you can keep for days and days.
