Ingredients of Frittata

  1. Prepare 8 large of eggs.
  2. You need 1/2 cup of milk.
  3. It's 5 small of potatoes.
  4. Prepare 4 of green onions, chopped up.
  5. You need 1 clove of garlic, minced.
  6. It's 1 pinch of each of dried thyme, basil and rosemary.
  7. You need 1 cup of parmesan cheese, grated.
  8. You need 2 tbsp of olive oil, extra virgin.

Frittata step by step

  1. Preheat oven to 350°F.
  2. Bake potatoes until cooked all the way through (can be done ahead of time, up to 2 days).
  3. Let potatoes cool. Peel cooled potatoes and slice into rounds.
  4. In a heavy, oven-safe pan on medium-low heat, sauteé potatoes with the olive oil.
  5. Add green onions and garlic to the potatoes.
  6. Add rosemary thyme and basil to the potato mixture. Stir potato mixture occasionally. While its getting golden brown, mix together eggs, milk and parmesan cheese well.
  7. Once potatoes are slightly browned, turn off heat and add egg mixture to the pan.
  8. Put the pan in the oven and cook for about 20 minutes.
  9. Let cool and eat!:).
