Sig's Tasty Filled Mini Loaf. Hello everyone, today's baking is cheese mini loaf bread. Ingredients of Sig's Tasty Filled Mini Loaf
- You need 1 small of crusty loaf , like petit parisienne, panini or any round cob loaf white or dark ..
- You need 1 tsp of olive oil.
- You need 4 of spring onions (green onions or scallions ) finely chopped.
- It's 2 of cloves garlic finely chopped.
- Prepare 1 of charred pepper in oil.
- It's 8 of olives , black , stones removed and halved or chopped.
- You need 1 pinch of each salt or salt substitute and cayenne pepper.
- You need 75 of to 100 grams grated mozzarella.
- Prepare 6 of slices petit chebra ( brie like goats cheese).
- You need 3 tbsp of grated parmesan cheese.
- It's 2 of Hot and spicy pickled sun dried tomatoes chopped (optional ( I run out ) ).
- It's 4 of slices of chopped, dry cured chorizo (optional).
Instead of forming them into individual loaves as suggested in the recipe, I used a muffin pan that I sprayed with PAM. The only thing I did differently was put a dash of garlic powder in and use my Pampered Chef Mini-Loaf pan to do four loaves. Sig's Tasty Filled Mini Loaf instructions
- First preheat oven to about 175 C.
- Then cut the crust lengthways of your chosen bread 2-3 times Almost all the way through. The cut it I again the short way about 1-2 inches apart almost all the way through. The bottom must still be intact..
- Heat a frying pan with one teaspoon olive oil ,add the onions ,the garlic, the chopped pepper and then the olives (hot , pickled sun dried tomatoes and/or dry cured and chopped chorizo if using ), heat all the way through . Turn off heat but leave to sit on stove..
- Now open up the bread , keeping the bottom intact and fill the cuts with the ingredients from the pan.
- Then fill the cheeses into the gaps and sprinkle with parmesan.
- Put into a baking dish and bake for about 25 minutes or until all the cheese has melted ..
- Serve with a salad if you like.
